Making Zucchini Fun for Kids and Adults
Zucchinis are in season and in abundant supply.

Zucchini is one of the very low calorie vegetables, with only 17 calories per 100 grams and containing no saturated fats. I think we should eat more of this especially after all the Easter chocolate binges.

Luckily, they are cheap too. They are currently selling at $1.98 kilogram at the green grocers.

Aside from adding zucchini to your pasta dish or in your Sunday veggie bake, what else can you make with all that zucchini? Time to get creative and come up with different ways to bring out the best flavour of these beautiful zucchini.

Here are my favorite zucchini recipes that will make you see this versatile zucchini in a whole new way.

1. Zucchini Chips

Potato chips nudge over, zucchini chips are in the house.

With a junk food name and taste, these zucchini fries are perfect as a quick snack or as a dinner appetizer. Dip them in a good creamy Greek yogurt for an instant taste sensation.

2. Zucchini and Sweet Potato Rosti

I have done a brilliant twist on classic potato rosti. I've swapped potato for zucchini and sweet potato. They tasted lighter and sweeter than the normally dense potato rosti. I've also added proscuitto crisp for crunchiness. Omit that if you are a vegetarian.

These make a great autumn light snack and perfect for a lazy morning brunch.

They are crunchy, colourful and delicious. What's not to love about them?

3. Zucchini Slice

Ah - a good old favorite that deserves a special mention. This
sensational savoury dish is an ideal kid-friendly snack packed with veggie goodness.

It is ridiculously easy to make and just perfect for a healthy lunch this long weekend.

I just adore a piece of this soft fluffy zucchini slice with hints of salty cured prosciutto and melty cheese with a nice strong coffee on a day-off.

4. Zucchini Noodles

Lighten up the dense carb noodle dish with zucchini.

Turn abundant zucchini into noodles for a healthy meal. It is perfect for the vegetarians, gluten-intolerant or diabetics.

It is totally easy. Just use a julienne vegetable peeler to shred zucchinis into nice thick long matchsticks. Ready to use within minutes.

This recipe mix long zucchini noodles with your normal noodles. Of course you can use 100% zucchini noodles if you prefer.

5. Stir-Fry Zucchini with Eggs

If you still have leftover zucchini, you can do a quick stir fry.
Zucchini and egg taste amazing together when made into a stir fry.

Stir-frying is a fast and fresh way to cook because vegetables are cook in a flash so they retain their color, texture and all the nutritious value.

You can pair zucchini with other autumn vegetables such as capsicums, asparagus and corns to contrast the colour and texture.
