Zucchini & Pumpkin slice

This recipe only takes 10 minutes to prepare and costs $1.50 per person. Grated pumpkin will add a taste like never before with your zucchini slice. Normally you would have bacon but why not go vegetarian and try this zucchini slice with pumpkin instead. Preparation time – 10 minutes (serves 4-5 people)
Ingredients
3 x medium zucchinis - washed and grated
1 cup of grated pumpkin
4 x free range eggs
cup of plain flour
1 teaspoon of vegetable salt
cup of grated tasty cheese
Method
1. Preheat oven to 180c degrees.
2. Grease a medium sized baking dish.
3. Squeeze excess moisture from grated zucchini and pumpkin.
4. Mix in a bowl zucchini, pumpkin, eggs, flour and vegetable salt.
5. Pour mixture into a greased baking dish and sprinkle grated cheese over the top.
6. Cook in the oven for 20 - 25 minutes or until cheese is golden.

Yum - wait until the top is golden brown before you remove it from the oven.
