Fine dining, progressive, international cuisine, excellence in presentation and service is . In their third week of opening and already creating a following. Choose from vegetarian and vegan, GF, organic and other options in a central location across from Toowoomba Central Plaza Apartments and close to the Bourke and Wills Hotel.

Lunch: Zev's Reuben pork house kraut mustard sandwich is authentic Reuben with melty cheese, diced pork belly and subtle mustard. House frilly crisps are excellent. Chicken, charred corn, dill and hazelnut is exotic for $26. Fish, fermented rice, pickle and dashi is $28. Other meal ingredients include truffles, buckwheat, goat milk cheese and ash. Smoked salt sits in a cute little dish on the table, hope patrons are not using their fingers.
Dinner starters: Wattle bread, honey butter and smoked salt; Oysters, market selection.
Mains include: Market vegetables, sesame seed, chick pea, chamomile; Scallop, mussel chowder, dill, potato; Lamb neck, lentils, labna, pomegranate, smoked mushrooms; Pork belly, celerise, carrot, kimchi, mustard greens. Sweets include Bitter Chocolate, Rhubarb and Lavender.

Still wines are all Australian. Reds include: Tahbilk Shiraz 2009 from the Goulburn Valley for $12 a glass, Gemtree uncut Shiraz from McLaren Vale for $11 a glass, plus some pinots and a cabernet sauvignon. Whites include: Ad Hoc Wallflower Riesling from the Margaret River, Bay of Fires Sauvignon Blanc from Tassie, another Riesling and a chardonnay. 'Bubbles' are French with the popular Bollinger Special Cuvee Champagne for $15 a glass and Louis Roederer Brut Premier Champagne (bottle only $120). The wine list changes every eight weeks.
