One of my personal favorite spots in the city to have a great cocktail is the Zeta Bar at the Hilton Sydney. The people at Zeta display their flair and creativity not only through the decor, but also through their experimental cocktails.
If you are brave, try the Luxury Zeta Margarita, a delirious mixture of cointreau, patron tequila, and fresh lime juice, but here's the twist. The people at zeta serve it with side of sea-salt foam in a baked and caramelized lime shell on a platter, which allows the customer to intake the exact amount of salt required. Another delectable signature Zeta cocktail is the Pineapple and Coriander Martini - a succulent pineapple pressed with freshly picked coriander leaves and Plymouth gin, a suggestion of vanilla de Madagascar and spiked with freshly pressed lemon juice then finished with their very own zeta vanilla syrup. Finally, revisit your viking side with some old fashioned 'meat and drink' with the Smoked Bacon and Maple Syrup Manhattan - a daring combination of smoky bacon infused bourbon with maple syrup, and a dash of cherry syrup and sweet and dry vermouth. Served with cherry garnish and crisp bacon.
Apart from the fantastic cocktail list, Zeta is well-known for its excellent levels of service and interactivity with its patrons. The bar owns the Zeta Belvedere Barschool which is open to anyone willing to learn how to make a winning cocktail.
