The road to fame and fortune in the restaurant game is fraught with pitfalls.

For youngsters keen to pursue a career in the kitchen, getting the big break and the right kind of guidance can be tough.

That's something recognised by the head chef of top Fremantle restaurant Bread in Common's Scott Brannigan, who has made his own serious mark on Perth's dining scene.



Brannigan's career began when he was just 16 and he recognises how important it is to guide young chefs on their own journey, a role he takes seriously and is putting into practice with a at his hatted Bread in Common restaurant in Fremantle.

Young chefs, James Higgs from Lulu La Delizia, Jason Scott from Millbrook Winery and Liam Davidson from Bread in Common will be given the opportunity to star in the kitchen by preparing a three-course dinner with matched wines.

The is always a popular part of Good Food Month, where the unsung heroes of Perth's top restaurants get to star.



Early in his own career, Brannigan travelled to the UK to work at Babington House in Somerset, which was then headed by former River Café chef Matt Armistead.

When he returned to Perth, Brannigan took up the role of head chef at Balthazar Restaurant and after three years there took the opportunity to open Bread in Common.

The focus of the restaurant is very much on fresh seasonal produce.



It's an approach he's keen to encourage in young chefs who he says are the future of the restaurant industry and to be involved and to mentor the young chefs through a beautiful dinner was a great privilege.

While he is obviously familiar with his own young chef Liam Davidson's work, it is a first for him to work with Higgs and Scott.

Each of the young chefs will be bringing a different approach to their dishes, each coming from restaurants which do different things but with a drive for culinary excellence.



Brannigan says the menu is beautiful with a raw fish starter, then pork belly and a dessert, which he said the chef was being a bit secretive about.

Young chef Jason Scott from Millbrook Winery said he was excited to be involved in the Good Food Month event.

He fell in love with cooking when he arrived from Queensland and stepped into a kitchen doing breakfasts and was excited by the fast pace and the nature of the work.



He then went on to study at TAFE, took on an apprenticeship at Co-Op Dining and won a number of awards before joining Guy Jeffries at Millbrook Winery.

The restaurant grows its own vegetables and Scott says he has planted seeds for the Young Chefs Dinner.
