A sausage is a sausage, isn't it? Not at . If you want to go upmarket from a Bunnings sausage sizzle or your backyard barbeque, this is the go-to place!



The place is the Mooroolbark Terrace, Mooroolbark, in Brice Avenue.



Brendon, a qualified butcher, has been making sausages here for fourteen years.



All their sausages are low fat and fructose friendly and many are preservative-free.



On one of my visits, I observed Brendon starting the sausage process. Preparing a cut of prime looking beef, he carefully removed every visible piece of fat.



The ingredients were then minced and fed into the sausage skins.



They are packaged and vacuum-sealed in a cryovac machine and frozen.





There are 26 varieties in their repertoire and Brendon says that at any given time 24 are in stock, or rather in the freezer.



Some are not available all year due to the seasonal availability of ingredients.



On one of my visits, a batch of mild chicken curry sausages had just been made. I purchased a four-pack with advice from Damien. "If you don't cook them today, freeze them." I can attest they were a mild curry taste as advertised and delicious. Real taste, not masked with the taste of preservatives in most sausages.



Before Covid 19 hit the hospitality industry, supplied their products to selected restaurants around Melbourne. This aspect of their business is starting to get back to normal.
