Sunday Morning we found ourselves once again wandering along La Trobe Terrace at Paddington.

Every time we decide to go there we are not disappointed. As soon as we got out of the car the sun burst out from a cloud to warm the chilly, by Brisbane standards, winter morning.

Initially we chose the Willow Tree Café on La Trobe because we stumbled on an available table bathed in sunshine. However as we were seated we became aware of the charming décor and the café's pleasant ambience and all agreed we had made an excellent spur of the moment choice.

We knew what we wanted — Eggs Bennie. We have tried a hundred of them over the years at various restaurants and cafes and have became painfully fussy, Eggs Benedict snobs.

I am pleased to say that our breakfast was delicious and we rated it in the esteemed top range of our soulful samplings. In my opinion a great Eggs Bennie is a precise affair of almost "Goldilocks Conditions." You see the poached eggs need to have soft yolks but heaven forbid any runny whites (which denigrates the fare into congealing snot like consistency in my view). The hollandaise sauce should be creamy, not too buttery and with definitely no hint of separation of the sauce.

The grilled bacon was crisp, sour dough perfect, spinach not quite wilted but I like it better that way anyway. And I liked the added touch of a quarter of a perfectly petite grilled tomato.

Normally my husband and I share a brekkie (as one egg is usually adequate) but I am so glad on this occasion we lashed out and ordered one each. The serves were on the smallish side of the equation and if I had any constructive feedback it would be that the meals were approaching the cool side of warm. However even this complaint is really not valid when you eat it as quickly as we did.
