Whoopie Pies Recipe

The new craze in Perth is Whoopie Pies, those delicious biscuit-y cake-like things which, if you haven't had one yet, you are really missing out! But rather than tramp the streets of Perth searching for the best WP's, why not have a go at making them yourself at home? I have a very easy recipe for you to try and I'd love you to have a go at it.

First of all, you need to preheat your oven to 180C (160C if fan forced). Then line about four baking sheets with greaseproof paper and spray lightly with canola baking oil.

Then whip together (with an electric mixer) 125g of unsalted butter, 3/4cup caster sugar and one teaspoon of vanilla. Beat until light and fluffy, then add two eggs, one at a time and beat until combined.



Then in a separate bowl, sift together one and a half cups of plain flour, 1/3 cup cocoa, 1 teaspoon of bicarb soda and 1/4 teaspoon of baking powder.



Add half of this to the butter mixture, then add 1/4 cup of milk. Mix well then add the remainder of the flour mix and another 1/4 cup of milk and mix together well.



Drop generous teaspoons full onto your prepared trays and bake in the oven for approximately ten minutes.

Cool the cakes on a wire rack while you prepare the butter cream filling.



Beat together 150g unsalted butter, a generous cup of icing sugar and one teaspoon of vanilla until really light and fluffy. Spread a generous amount of the butter cream on the underside of one cake, then press another onto the cream and sandwich them together gently.

You can either roll the edges in hundreds and thousands, dust them with cocoa powder or just leave them plain.



Which ever way you decorate them, they'll go quick so you might even want to make a double batch.
