White Choc & Macadamia Almond Biscuit Recipe

This cute little biscuit is the perfect accompaniment if you are looking for a healthy sweet treat, to have with your coffee. It doesn't take long to put together, takes minutes in the oven and you can be eating one within the hour. It is a healthy option if you are trying to eat biscuits in moderation - like I am at the moment! Why don't you make a batch this weekend?

Ingredients: (Makes 10)

**1.5 cups almond meal
1/2 teaspoon bicarb soda
1 egg, whisked
1 Tablespoon olive oil
2 Tablespoons honey
1 teaspoon vanilla essence
1/3 cup chopped macadamias
1/3 cup white choc chips**



What To Do:

Step 1: Preheat oven to 170 degrees, fan-forced. Line a baking tray with baking paper.

Step 2: In a medium bowl, add the almond meal and bicarb soda and stir.

Step 3: In a separate small bowl, add the egg, olive oil, honey and vanilla essence. Stir and pour into the almond meal bowl. Combine.

Step 4: Fold in the macadamias and choc chips.

Step 5: Using your hands, pull out a small amount, roll it into a ball and place on the tray. Repeat for all and then squash down gently with a fork.

Step 6: Bake for 12 - 15 minutes, or until browned on top. Enjoy one (or two!) with a cuppa, for a healthy sweet treat on the side.
