If you love having a rice dish for dinner, there is a wide range of recipes to choose from - where do you even start? There are many cuisines around the world that highlight the humble grain of rice - Mexican, Thai, Chinese, Indian - just to name a few. There is also basmati rice to cook with, as well as jasmine, brown, white, risotto...there are literally thousands of recipes you can make with each one.
These recipes, below, are my personal favourites (so far!). If you have your own favourite to share, please leave a comment at the top of this article and it will be shown underneath, for others to read. If you love rice as I do, then you will love them all...
Cook rice to directions (we use a rice cooker and cook it with 3 cups of water). Add 1 Tablespoon oil into a large non-stick frypan or wok, and add the bacon. Cook for 5 minutes until crispy then add to a large bowl. Add another 1 Tablespoon olive oil to the frypan and add the garlic and onion. Fry until the onion is clear. Remove from heat and add the garlic and onion to the large bowl with the bacon. Add a teaspoon of oil to the frypan and add the egg. Swirl it around the pan to form a thin layer and then after it has set, use a spatula to roll it up and remove it from the pan. Slice thinly and add it to the large bowl. Add prawns and peas into the large bowl. Add another teaspoon of the oil to the frypan and add the rice and stir. Combine the soy sauce and Chinese Five Spice in a small jug and then pour over the rice. Stir. Pour all of the ingredients in the large bowl into the frypan and stir to combine. Heat oil in a large saucepan. Add onion and saute for 5 minutes. Add capsicum, garlic and ginger and cook for 5 minutes. Remove one cup of the vegetables and set it aside. To the remaining amount, add the cumin, coriander, chilli powder, cinnamon, cardamom seeds and turmeric and stir for 1 minute. Add the basmati rice and stir for 1 minute. Add vegetable stock, chickpeas, sultanas and the cup of vegetables that you took out before. Put the lid on and bring to the boil and simmer on very low for 5 minutes. Lift the lid to stir and then put the lid back on and cook for another 5 minutes. Stir again, ensuring it's not sticking to the bottom. Take a spoon of the rice and do a taste test, to check that it is soft and cooked - if not, add 1 cup of hot water and put the lid back on and simmer again for a few more minutes. When the liquid has evaporated, stir through frozen peas and serve. See here for details.

Risotto is another tasty rice dish that the whole family can enjoy. My two favourites are BBQ Chicken, Zucchini & Pea Risotto and Chicken, Mushroom, Pumpkin & Spinach Risotto - they are both delicious and easy to make. Once you get the base right, you can add whichever flavour combination that you like - roast some pumpkin, add some pine nuts, stir through a variety of mushrooms - the choice is yours.
