Are you looking for some tasty, creative pie recipes to make this winter? Many years ago, when the second 4 Ingredient Cookbook came out, the only pie that I made was their Roma Pie. It was so easy and loved by every member of the family, that it is still our number 1 today - particularly on a busy weeknight (see recipe in the article below). Our other favourite pie recipes come from friends and family, such as Chicken Stroganoff Pie and Shepherd's Pie, so they are tried and true and taste delicious. I have also found that if you have any leftover chicken casserole, or even Butter Chicken , then that also tastes amazing in a pastry case the next night, for an easy "leftovers" dinner.

Chicken Stroganoff Pie

1 brown onion (chopped), 2 cloves garlic (finely diced), 500g skinless chicken thighs (diced), 420g can of cream of mushroom condensed soup, 200g mushrooms (sliced), 1 Tablespoon tomato paste, 2 teaspoons Worcestershire sauce, 1 teaspoon Moroccan seasoning and 1 sheet frozen puff pastry (thawed).

Preheat the oven to 200 degrees. In a frying pan, cook onion and garlic until soft. Add chicken and cook until browned. Add seasoning, mushrooms and tomato paste and cook for 2 minutes until soft. Stir in soup and Worcestershire sauce and bring to the boil. Spoon into individual pie dishes and cut puff pastry to fit on top, so it hangs down the sides. Cut two slits on top. Cook in the oven for 15 minutes or until the pastry has puffed and browned. Serves 2 large pot pies, or 4 small pie dishes.



4-Ingredient Roma Pies

4 sheets puff pastry, 500g lean mince, 400g jar of your favourite pasta sauce, 2 cups frozen peas, corn & capsicum

Preheat oven to 200 degrees, fan-forced. In a large frypan, add the mince and frozen vegetables and cook until the mince has browned. Pour in the pasta sauce and simmer for 10 minutes. While simmering, cut six large rounds into each sheet of pastry. Line a non-stick muffin tray with 12 rounds, spoon in mince mix and top with final rounds of pastry. Seal with a fork. Bake for 20 minutes or until pastry is browned.

Grandma's Shepherd's Pie Recipe

500g lean beef mince, 1 onion, chopped, 1 cup water, 1 chicken stock cube - crumbled,1 teaspoon mixed herbs, 1 Tablespoon soy sauce, 1/2 teaspoon nutmeg, pepper to taste, 2 teaspoons plain flour, 1/3 cup water. Mash: 4 potatoes, peeled and chopped for mashing, 1 egg - stirred, 1 Tablespoon margarine, 1 Tablespoon milk

Boil potatoes for 20 minutes. Drain. In a large frypan, add the mince and onion and cook until browned. Drain the fat from the pan. Add the 1 cup water, crumbled stock cube, mixed herbs, soy sauce, nutmeg and pepper. Simmer for 10 - 15 minutes until most of the mixture has evaporated. In a small cup, combine the flour and 1/3 cup water and stir. Add it to the pan and stir for 1 minute. Pour into casserole dish. Mash the potatoes with margarine and milk, and add half the egg wash. Spoon the mashed potato on top of the meat mixture and then pour over the remaining egg wash. Spread the egg around with a fork and ensure the mash goes into each corner. Put the pie under the grill for a few minutes until it starts to brown on top. Serve with broccoli, peas and carrots, for a healthy family meal.
