Do you like to experiment with making mug cakes? I often bake cakes with my daughter, so she loves this mug cake idea as she can add the ingredients to her favourite mug and make her own cake for dessert. These are our favourite recipes below (one is egg-free for a member of the family), but feel free to experiment with your own ideas - you could take out the choc chips and add sultanas, sprinkles or chopped dates, whatever you like. Both recipes fill the mug half-way, so it gives you room to add a scoop of vanilla ice-cream on top, which then melts and creates an even tastier dessert.

Chop Chip Mug Cake (Egg-Free) - the recipe fills the mug halfway so there is room for ice-cream on top!


Choc Chip Mug Cake (Egg-Free)

2.5 tablespoons plain flour, 2 teaspoons raw sugar, 1/8 teaspoon baking soda, 1 teaspoon olive oil, 1/8 teaspoon lemon juice, 1/8 teaspoon of vanilla essence, 2 tablespoons water, 2 tablespoons chocolate chips

In your mug, add the flour, sugar and baking soda and mix well. Add the oil, lemon juice, vanilla essence and water and mix again. Fold through the choc chips. Cover the mug with cling film. Microwave for 1 minute, or until cooked. Top with a scoop of vanilla ice cream.

* For a dairy free option, replace the choc chips with sultanas and top with your favourite dairy free ice-cream.

Chocolate & Raspberry Mug Cake

4 Tablespoons plain flour, 2 Tablespoons cacao powder (or cocoa), 2.5 Tablespoons sugar, large pinch of baking powder, 4 Tablespoons milk, 2 Tablespoons olive oil, 2 Tablespoons dark chocolate choc chips (split in two), 5 frozen raspberries (or blueberries and other fruits) defrosted

In a small bowl add the flour, cacao, sugar and baking powder and stir to combine. Add the olive oil and milk and stir (the mixture will look dry to make a dense "cake", but if it looks too dry and it isn't forming together, add another tablespoon of milk). In a mug, add 1 Tablespoon of choc chips and then half of the cake mixture. Drop in the raspberries and remaining choc chips (for a moist surprise in the centre). Add the remaining mixture.
