Enjoy this side salad with your favourite BBQ meats or tofu burger patties
This recipe can be used to create a warm snack or side dish with those spring or summer BBQ's you host for your family and friends. If you would like to add a little spice to this dish you can change the taste by adding some curry powder, fresh chilli or even eschallots for the milder taste buds. Easy to do and versatile this will be a winner with your family, friends and the kids.
Preparation time 5 minutes (Serves 4 people)
Ingredients
4 x washed potatoes
4 x free range eggs
50 grams of baby spinach
4 tablespoons of your favourite mayonnaise
My favourite mayonnaise.

***For extra spice add curry powder, fresh chilli or eschallots.
Method
1. Wash potatoes and dice into medium sized pieces.
2. Fill a medium sized saucepan ¾ of the way with water.
3. Add potatoes and eggs to the water and put on a medium heat.
4. Cook potatoes until just soft and remove from the heat. (cooking time is approximately 8-10 minutes once water is boiled.
5. Drain water from the eggs and potatoes in a strainer.
6. Place potatoes in a mixing bowl.
7. Peel the eggs and slice the eggs into pieces.
8. Add the eggs to the potatoes and mix through.
Mix the potatoes and eggs together.
9. Wash and slice the spinach into small strips.
Baby Spinach Leaves
10. Add the spinach and mayonnaise to the potato mixture and stir through.
11. Eat immediately as a snack or as a side dish with a BBQ or homemade tofu patties.
