Fall into the magical fairytale of The Victoria Room
Tonight the fairytale begins. Step through the majestic doors and climb the lush velvet cloaked stairway into the royal blue Victoria Room on Darlinghurst's Victoria Street.

Down the Rabbit Hole you will tumble as you embark on the adventure of their new cocktail list. Perched on one of their bar stools be mystified by the long list of enchanting concoctions and colourful cocktails on offer. Cleverly conjured up by award winning bar manager, David Green be taken on a journey through not only the looking glass but three extravagant chapters.

My journey started with Chapter One which took me on a Discovery of A New World with the Flightless Fairy, a fruity mix of peach liquor and potent absinthe nicely finished with a refreshingly healthy serving of juiced apples. This was one prickly fairy and my absolute favourite for the night.

"Would you tell me , please, which way I ought to go from here?" Alice politely asks. Continue the journey as you grab your paddle for a ride Down the Wicked River with a naughty single malt, salted caramel, chestnut liquor smoked with Australian paper bark and draped over a chilled black rock precariously placed in your delicate crystal glass. Smoothly decadent and full of toffee flavours, the magic is all in the presentation.

"Curioser and cruiser!" .. yes I certainly was curious as the cocktails kept coming. I was not curious at all about Fresh Pickings as it sounded like a garden bed to me and considering the accompanying vegetable platter, although beautifully presented, it was just a mix of vegetables .. a unique accompaniment to cocktails but very well suited to this particular cocktail.Tequila infused with golden marigolds and dressed with cointreau noir, celery shrub bitters and delicately dusted with cinnamon and chocolate powder. Loved the spicy cinnamon finish but the garden bed liquid was not for me.

Here I go down the rabbit hole into Chapter Two and Inside the Mad Hatter's Mind to stop for a sip of The Mad Hatter's Secret Tea. Gin, amaro and cardamon bitters served with a walking cane in a delicate tea cup does not sound like a cocktail at all, rather something you could sip on at a high tea. But Victoria Room is all about decadent surprises and this certainly is a delicately, rich treat in a delicate tea cup.

"But I don't want to go among mad people" Alice remarked "Oh, you can't help that" said the Cat "We're all mad here. I'm mad. You're mad". Keep exploring the madness of the Mad Hatter as you are tempted by Mosaic Hopping, the next of the crazy concoctions showcased by David Green. Appleton 8, Licor 43 and pineapple juice topped with the most unusual Aloe Vera foam and complimented by smoked cinnamon. What an amazing blend of flavours.

Putting the final touches on Mosaic Hopping

The final step of the journey into Chapter 3, Off With Their Heads certainly explores guilty pleasures as you are slowly Waking Up From The Dream, which is The Victoria Room cocktail list. What a dream the list is as each flavour and taste bud is magically explored. Woodford Reserve, Cointreau Noir, maple syrup and orange bitters superbly mixed together and injected into a ball of ice. "Come, we shall have some fun now! " thought Alice and yes this is where the fun begins as you crack that ball of ice full of delightful sounds and scents. Dip into the ball and taste cool sparkles, stars and all things magical.

As Alice ends her time in Wonderland your time in the wonderland of The Victoria Room can continue as long as you want it to.
