Vegan Cornmeal-Fried Cucumbers Recipe

It is time for our
Daniel's Fast and I need to figure what to put on my family's dining table. I went through my
La Canasta bag and I had 3 cucumbers from last week. I have a lot of cornmeal and have been trying to use it up. I heard that people use cornmeal in their deep-fry batter, so I thought this might work. I found some recipes for cornmeal batter, but all of them included eggs and we can't eat eggs during the fast, so I tried it without eggs. It came out surprisingly good, considering I used cucumbers and no eggs. So here it is my recipe for cornmeal-fried cucumbers! Who would have thought!
Ingredients:
3 good size cucumbers
2 cups of cornmeal
Oil for deep-fry
Some salt and pepper
Preparation:
Peel the cucumbers and cut them into 2/8" thick. Heat the oil on the stove for deep fry. The amount of oil should just cover the cucumber slices once they go in.
Put cornmeal, salt, and pepper into a large bowl. Mix well. Add the sliced cucumber into the mix. Use your hands; toss the cucumber slices around to make sure they are covered with the cornmeal mix.
Fry the coated cucumbers in hot oil. Don't fry too many slices in the pan at the same time; just to cover the bottom size of the pan is good. Fry until they turn golden yellow on each side.

My family loved them and even my husband who doesn't like cucumbers couldn't stop eating them.
This recipe is perfect for a vegan who loves deep-fried food. Just like me!
