Ingredients: (Makes 7-8)
**1 cup self-raising flour
1 cup raw sugar
1/2 cup cacao
1/2 cup vegan choc-chips (optional)
1 cup lite coconut milk**
* Pour the rest of the coconut milk into a sealed plastic container and keep it in the fridge for up to 3 days for another recipe or double this recipe and use it all up.
What To Do:
Step 1: Preheat the oven to 180 degrees, fan forced. Place 7 - 8 muffin cases in your muffin tray.
Step 2: In a large bowl, combine all of the ingredients (except the coconut milk) and stir. Add the coconut milk and stir until combined.
Step 3: Spoon the mixture into the muffin cases, filling each one just over half way.
Step 4: Bake for 20 - 25 minutes, until cooked in the centre. Allow to cool or eat them warm.
