This is a great tasting healthy meal that takes just 10 minutes to prepare. Excellent for when you want a quick meal for two.

Ingredients:
2 Puff Pastry slices
1 can of tuna drained
1 capsicum diced
1 onion sliced
1 tomato diced
2 mushrooms sliced
1 egg

Preparing the vegetables

1) Preheat the oven to 180 degrees Celsius. Mix the tuna, capsicum, onion, tomato, mushrooms and egg in a bowl, season with salt and pepper.

Mixture ready

2) Divide the mixture into two and place it on the puff pastry slices on one side. Then simply fold over the puff pastry in the middle and seal the edges, making sure to press it so it does not spill out while baking.

Laying the mixture on the puff pastry

3) Lay the pies onto a greased baking tray and place them in the oven for 15-20 minutes or until golden.

Ready for the oven!

Great thing about this recipe is that you can mix and change the ingredients to whatever you prefer.

For a different filling, you can try using feta cheese, onion, fresh mint, and tomato for a nice vegetarian alternative. Also if you don't have a certain ingredient laying around, then you can easily replace it with something else, or take it out all together as long as you keep the core ingredients.

Bon Appétit!
