Tuna and Capers Linguine would have to be one of my favourite dishes. Healthy, tasty and extremely simple. Below are the ingredients and method to follow for this magnificent meal. Trust me, it would have to be one of the best pasta dishes I have tasted.
2 garlic cloves, chopped 2 tablespoon capers 1 large tin olive blend tuna 3 tablespoon sweet chilli sauce 2 tablespoons tomato paste 1 chopped tomatoes (basil and garlic preferable) Half a punet of cherry tomatoes
handful of parsley
pinch of paprika
1 teaspoon sugar
1 tablespoon olive oil blend
salt and pepper to season
1. Heat a frypan with oil on medium heat. Stir in onion and garlic until lightly browned.
2. Place in tuna, capers, tomato paste, chopped tomatoes and cherry tomatoes and stir in well. Bring it to a simmer. Mix in sweet chilli sauce, paprika, parsley, sugar and salt and pepper.
3. In a separate pot, boil the linguine for about 5-7 minutes until al dente (to the bite).
How simple and easy was that for a home made meal - plus it is affordable and tasty.
HINT: Try purchase home-made pasta which is supplied from any Italian grocers such as Haberfield, Liechhardt or can be found at the food markets on the weekends. It truly does make a difference.
