Fifteen years ago I traded a corporate career for life on the river. Close enough to Melbourne to get a quick City fix, plus a great community with excellent coffee and four healthy active boys to keep me entertained, I've never regretted the change.

This brownie mix makes the trip to Costco worthwhile
Indulgent chocolate brownie
Delicious bittersweet chocolate brownies from a packet mix

The only thing better than chocolate is more chocolate. These packet mix triple-choc brownies from a box certainly support this theory.

Each time I pass them on the shelves at Costco they send out their siren call. I rarely leave without a box.

Great to have in the cupboard for unexpected visitors, they are quick and simple to whip together and are impressive to serve warm and gooey.

Their home-baked aroma fills the whole house with great expectations.

Chocolate brownie ingredients
One sachet plus an egg, water and oil makes a batch

It's hard to resist packaging like this - but it does deliver the promise

The chocolate involved is from Ghirardelli, who have a great reputation and links to Swiss Chocolatiers Lindt & Sprüngli.

Egg, water and Oil
You will need a few staples from home

Not everything you need is inside the box. The mix requires the addition of an egg per sachet, plus 1/3 cup water and 1/3 cup oil. These extras should be mixed together before adding the dry contents of the sachet.

Simple to bake rich chocolate brownie
Now all you need to do is stir and bake

Once mixed, simply pour into a greased tray and bake in a pre-heated oven for the prescribed time. Lining the tray with baking paper results in a crisper edge, easier extraction and less washing up.

Extend paper up and over the edge for easy lifting

WARNING: It is easy to overbake and spoil the gooey centre. I set the timer to go a bit earlier than suggested just to be on the safe side.

Only one bowl to wash up

The mix even tastes good straight from the bowl.
