The best trio of meats on a stick
Meat Skewers with chicken, lamb and salmon with capsicum
This meal is one of my favourite meat dishes - it's got some of the most delicious, best forms of meat and lasts you at least a week. It is also a great dish to make for a social gathering. I have chosen salmon, chicken and tandoori lamb (marinated), but you are, of course, free to choose more or different types of meat to cater best to your tastebuds.
250g chicken breast 250g fresh salmon 250g Tandoori lamb (marinated) 1/2 red capsicum (red pepper) 1/2 green capsicum (green pepper) 1 packet Haloumi cheese (Antipasto)
Cook the skewers in the oven for about 40 minutes, making sure that you rotate them every 10 minutes so that the meats are cooked all the way through. Take out of the oven once the chicken looks golden brown and the salmon and lamb look like they've been well-cooked.
Serve the skewer platter with grilled haloumi on the side and enjoy the meal.
