If you are looking for an easy lunch or dinner, then you can't go past a puff pastry tart. Just like a pizza base, you can add whatever ingredients you like and then enjoy the results - with the added bonus of crunching into flaky puff pastry, which makes a tasty, crumbly mess!
This first recipe for Bacon & Caramelised Onion Tart is number one on this list for its sweet and syrupy onions, combined with salty bacon and soft sour cream. Although this one is our favourite, it is always handy to have some easy and time-saving options on hand as well - which is why the other recipes include leftover roast vegetables and BBQ chicken. Add your favourite pizza ingredients and start crunching!
1/ Bacon & Caramelised Onion Tart
**6 slices of shortcut bacon, chopped
1 onion, sliced
1 garlic clove, crushed
1 teaspoon sugar
1/4 teaspoon of mixed herbs
1 sheet of puff pastry, thawed
1 cup of Lite Sour Cream

Preheat oven to 200 degrees, fan-forced. Heat oil in a frying pan and cook bacon until crisp. Remove and soak on paper towel. Add onions to the frying pan, cook for 10 minutes until soft, then stir in garlic, sugar and herbs. Cook for an extra minute. Add bacon, stir and remove from heat. Place pastry on a lined baking tray and use the tip of a knife to score a 2cm border all the way around the edge - be careful not to cut right through. Spread half of the sour cream in the centre of the square, grind over pepper, add the bacon and onion mixture, and dot the remaining sour cream on top. Cook for 20 minutes until crispy and the pastry is cooked. Cut up into quarters and serve.
2/ Easy Roast Vegetable Puff Pastry Tart
**2 cups of leftover roast vegetables, chopped
1 Tablespoon basil pesto
100g feta cheese, crumbled
1 sheet puff pastry, thawed**
Preheat oven to 200 degrees, fan-forced. Place pastry on baking tray and using the tip of a knife to score a 2cm border all the way around - be careful not to cut right through. Spread one tablespoon of basil pesto over the pastry within the border. Spread leftover roast vegetables (such as roast pumpkin, onion and zucchini) over the pesto. Sprinkle over the feta. Cook for 20 minutes, or until the pastry edges have browned.
3/ Easy BBQ Chicken Puff Pastry Tart
**1 cup of BBQ chicken breast, shredded
1/4 of a red onion, diced
1/4 of a capsicum, diced
1 Tablespoon of hot tomato chutney
1 cup mozzarella cheese, grated**
Preheat oven to 200 degrees, fan-forced. Place pastry on baking tray and using the tip of a knife to score a 2cm border all the way around - be careful not to cut right through. In the centre, spread over the hot chutney then top with the BBQ chicken, onion and capsicum. Scatter over the mozzarella. Cook for 20 minutes, or until the pastry edges have browned.
