Easy, tasty recipes you can make tonight
Are you looking for recipes which are easy to make, tasty and use up the chicken thighs you have in the freezer? Fortunately, there are thousands of different recipes you can make with chicken thighs, as they are full of flavour and very versatile. These are just 3 recipes that our family go back to time and time again. I hope they become favourites in your household too...



1/ Chicken Stroganoff Pie

Ingredients:
1 brown onion, chopped
2 cloves garlic, finely diced
500g skinless chicken thighs, diced
420g can of cream of mushroom condensed soup
200g mushrooms, sliced
1 Tablespoon tomato paste
2 teaspoons Worcestershire sauce
1 teaspoon Moroccan seasoning
1 sheet frozen puff pastry, thawed

Preheat oven to 200 degrees.
In a frying pan, cook onion and garlic until soft. Add chicken and cook until browned. Add seasoning, mushrooms and tomato paste and cook for 2 minutes until soft. Stir in soup and Worcestershire sauce and bring to the boil. Spoon into individual pie dishes and cut puff pastry to fit on top, so it hangs down the sides. Cut two slits on top. Cook in the oven for 15 minutes or until the pastry has puffed and browned. Serves 2 large pot pies, or 4 small pie dishes.

2/ Sweet Chicken & Cashew Stir fry

Ingredients:
1 Tablespoon sesame oil
1 red onion, sliced
400g skinless chicken thighs, diced
4 garlic cloves, finely chopped
4 Tablespoons sweet soy sauce (kecap manis)
1 Tablespoon fresh coriander, chopped
3 teaspoons unsalted cashews

Heat oil in the wok and cook the onion for 1 minute. Add garlic and chicken to the wok and cook for 3 minutes. Add enough warm water to almost cover the contents of the wok and simmer until the water reduces to a third of the depth of the contents. Add the sweet soy sauce and bring to the boil. Serve chicken with sweet soy sauce over rice, garnished with cashews and coriander. Serves 4.

3/ Mexican Chicken Kebabs

Ingredients:
4 skinless chicken thighs, diced
1 cup milk
1 Tablespoon lemon juice
1 Tablespoon mild taco seasoning
1 Tablespoon lime juice
1 teaspoon dried mixed herbs
1/2 teaspoon smoked paprika

Marinate chicken thighs in remaining ingredients overnight. Soak skewers in water for 15 minutes, then thread the chicken onto skewers. Place on BBQ and turn regularly until cooked. Makes 6 - 8.
