Rad, new cafe rolls into Redfern
What differentiates Three Williams from most other cafes in Redfern is its spacious design. It's easily double the size of veteran Redfern cafes. A space dictated by concrete, exposed brick and tones of light woods, Three Williams is afflicted with hollow chatter akin to cafeteria-like noise. But it's not something that's a problem unless you're here for a deep, meaningful tête-à-tête.

I know ahead of time that the glazed beef brisket narnie with slaw, gherkins and chipotle mayo on signature housemade naan-style flat bread is the dish to order. The beef brisket is tender and flavoursome. I'm also fond of the crunch from the red cabbage slaw and gherkins. The fact that Three Williams steers away from trite breakfast staples genuinely impresses me.

The fried tempeh narnie with pickled vegetables, sriracha and lime mayo is an intriguing option for vego-philes like myself. With a hit of spice and flavour-galore from the pickled cauliflower and carrot, there's a definitive Asian stamp on this dish. After living in Indonesia for a decade, my love for tempeh (or tempe in Indonesian) has developed into a kind of obsession. Overall I'm pleased with this sarnie. I only wish that the deep-fried tempeh had been seasoned before frying to add a bit of saltiness - but this is a personal preference and more-so a nostalgic hat tip to Indonesian deep-fried tempeh, which is usually marinated in salted, spiced water first.

Now let's get to the important stuff. The beer battered chips with house aioli are wondrous. They're the best chips I've had in quite a long time. Thanks to the beer batter, they're incredibly crunchy. Needless to say, the bowl is empty in no time.



Coffee at Three Williams is by Single Origin. I order the iced coffee, which is detailed as 'cold brew with sweet milk'. I order it with soy milk. There's sweet condensed milk at the bottom of the glass, and we all know that condensed milk, much like bacon, makes everything taste better. I like that there's also a rogue coffee ice cube floating in the beverage, ensuring it doesn't water down too much.

Smoothies come in adorable milk bottles and fresh juices in large, tall glasses. There's also a peanut caramel shake that I was almost going to order had I not been pining for some caffeine. Check out the rest of Three Williams' food and drinks menu below.

I like the look of their narnies. Is that a typical was of serving an Australian sandwich, or is it their own unique take? It is a bit of a fusion between a burger and a taco.

I went to this cafe on Sunday afternoon. There was about a 20 minute wait for a table but it was worth waiting for.
