The macerated rum, which is a very different style to that usually encountered in Australia, will be served on the rocks and in three different cocktails, as will samples of two other flavoured rums available.
Audrey was born on the French-speaking tropical island, which is east of Madagascar near the island of Mauritius, where her family founded the Isautier Distillery in 1845 and still own and operate the business. Isautier exports mainly to France where they sell a million bottles of their rum each year.
Audrey is part of the seventh generation of the family, most of whom still live on the island.
She took off for Australia in 2007 to look for wider sales opportunities and in December 2016 the first bottles of Isautier rum were imported.
Guests will not only sample exquisite cocktails but also learn to make their own.
