Fork & Cork evenings at The Tilbury, starting

The Tilbury is putting on "Fork & Cork" evenings on Wednesday nights in June, and the first event starts on Wednesday 4th June. The Tilbury, in partnership with producers such as Vic's Meats, Simon Johnson and Sonoma will use the "Fork & Cork" evenings as a way of showcasing the best products from these producers.
Offering exclusive one-off dishes, accompanied by handpicked wines, The Tilbury is the place to be this winter. To see their diners through winter, The Tilbury will hold evenings of food to dine for. Italian food on Tuesdays, Fork & Cork evenings, Sunday Brunches and Sunday Roasts.
To spotlight the best Australian winter produce, the Head chef - Elton Inglis (who has worked with Gordon Ramsay and Jamie Oliver) will launch The Tilbury's Winter a la carte menu.
Come along and try some of his specialties. Silver dory, crispy duck breast, pork fillet, crispy pork skin and salsa verde to name a few.
Tuesday nights, at "Italian on Tuesdays", come and try a dish of osso bucco, seafood ravioli with shellfish bisque. Sunday roast at The Tilbury is sure to set your taste buds on high alert, with classic British pub rituals. Try pork belly with honey roast parsnip, savoy cabbage, bacon and roast potatoes. Or slow roast lamb shoulder, duck fat potatoes, spiced pumpkin, cavolo nero and salsa verde.
(What is cavolo nero? And salsa verde? Cavolo nero is also known as black cabbage, Tuscan Cabbage, Tuscan Kale, Lacinato and dinosaur kale. It is an Italian cabbage with dark green leaves which can be used in all cabbage recipes. It is particularly used as a vegetable, in soups or fried in olive oil with garlic and chilies. Italian salsa verde is a cold sauce. It includes parsley, vinegar, capers, garlic, onion, anchovies, olive oil, and possibly mustard. It is usually blended into a coarse sauce with a food processor.)
Sunday brunch will be served on Sundays at the Tilbury's, in the bar. Brunch is on from 10.00am to 12 noon. Try brioche French toast with slow roasted bacon and maple syrup, or green eggs on sourdough. After brunch take a leisurely morning walk along the Woolloomooloo Wharf.
The Tilbury Hotel has a warm, comfortable environment. With varnished wood and long leather banquettes and fireplaces, The Tilbury Hotel is luxury dining in a lovely setting. There is a large deck upstairs and tranquil courtyard outside, downstairs.
The dining room, downstairs, has a view of the courtyard. Chef Elton Inglis has created a new menu with a fresh approach to cooking, made possible by the fresh produce available to The Tilbury seasonally.
Upstairs at The Tilbury, there is a 1960 style lounge bar decked out with wooden floors, soft lighting and dark leather furniture. The deck allows guests to relax and enjoy the surroundings with a choice of areas to sit in.
Outside the bar, there is a space with raw wooden boards, and big umbrellas to provide shade during the day. Of an evening there is carefully planned lighting that provides a nice atmosphere to sit and chat. There is a wine list and cocktails available.
