So what is soul food? Soul food, believed to have originated in Africa, is common cuisine in the southern United States. A feast of flavours, it fills your belly and soothes your soul. Think jambalaya, baby back ribs, southern fried chicken, and pulled pork. Add some sides: black-eyed peas, bourbon-glazed sweet potatoes, buttermilk coleslaw, cornbread and gravy. Wash it down with American soda, iced tea, beer, wine, or mint juleps. And finish it all off with a piece of pecan pie, apple cobbler with ice-cream, or The Fat Elvis (a surprise dessert).
