This is a vegetable-forward breakfast casserole made in your slow cooker. This is a lazy weekend breakfast. Often good when you are in the mood for a meatless morning meal.

They are small but mighty burgers with mushrooms as the buns! They are tasty for lunch and dinner. If you need to stay away from carbs, these can be your saving grace!

Chilled and crisp cucumber pieces as a cool side!

A vegetable dish that is a cinch to prepare! Deliciously addictive!

Sweet and cinnamony apple slices in cream cheese and caramel quesadilla! Why? Because it is shorter than baking a caramel apple pie! LOL

Opinion

Ms. Drummond's cookbook is awesome!

I had to really, really summarise!

Doctors always say to get in your vegetables and fruit. I think that they would be happy! I have included broccoli, broccolini, mushrooms, cucumbers and apples! Yay!

This cookbook would make a nice gift and is easy to follow.
