Located in The Mira Hong Kong, Cuisine Cuisine is a modern and fine-dining Chinese restaurant offering classic Cantonese and Chinese delicacies with a contemporary twist. Chef Edwin Tang and his team served up the stir-fried vermicelli with fresh crab meat, shallots, coriander and bean sprouts.
Each mouthful delivered a tasty combination of soft, moist and crunchy textures with sweet and salty flavours from the ingredients. The unconventional use of balsamic pearls from molecular gastronomy in this Chinese dish added a burst of sweet sour that awoke the palate.
