Located in The Mira Hong Kong, Cuisine Cuisine is a modern and fine-dining Chinese restaurant offering classic Cantonese and Chinese delicacies with a contemporary twist. Chef Edwin Tang and his team served up steamed fresh Boston Lobster with peach gum, shredded coconut and egg white. This contemporary dish introduced various textures and flavours to the palate unavailable from classic Chinese methods of treating lobster.
The de-shelled Boston lobster claw was delicately steamed to highlight its freshness and sweetness. The salmon roe introduced a burst of saltiness to the palate. The egg white custard base added a soft moistness to the dish which contrasted with the fleshy lobster and the light crunch from the young coconut flesh.
