Located in The Mira Hong Kong, Cuisine Cuisine is a modern and fine-dining Chinese restaurant offering classic Cantonese and Chinese delicacies with a contemporary twist. Chef Edwin Tang and his team served up Hokkaido scallop with mango sauce and rice cracker. It combined European-styled plating with classic Chinese cooking techniques into an attractive and multi-textural dish.
Freshly flown-in from Hokkaido, the substantial scallop was golden crusted to seal the moisture and sweetness, and cooked to a tender medium. The rice cracker added further crunch while the mango provided a fruity tang. The saffron-like garnish was finely sliced and deep-fried red chili pepper that added a tingle to the palate.
