A book full of healthy recipes from Nutritionist Lola Berry


First published in 2015, The Happy Cookbook is a recipe book created by Australian Nutritionist Lola Berry.

With 130 gluten-free and sugar-free recipes, it is primarily a cookbook, supplemented with snippets of information on other health-related topics, such as food cravings, yoga, food choices, mental health, how to get better quality sleep, and natural beauty tips and tricks.

The recipes are based around nutrition-dense whole foods, and feature many of the popular 'superfoods', such as coconut oil, kale, quinoa and cacao powder. These ingredients, along with all the other essential ingredients are listed at the beginning of the book.

The book is then divided into chapters, including smoothies, sweet treats, patties, fritters and burgers, salads and veggies, and loaves and spreads.

Options for Vegetarians and Vegans
While the book does contain meat-based dishes, there are also plenty of vegetarian, dairy-free and vegan dishes. Some of the vegetarian recipes include:

Broccoli and chickpea patties with tahini and lime dressing (p. 111)
Sweet potato gnocchi with kale pesto and pine nuts (p. 106)
Zucchini fritters with cashew, mint and lime aioli (p. 112)
Kale and Ricotta pie with tomato salsa (p. 105)

And some of the vegan recipes are:

Sweet potato and quinoa patties with green tahini and lime dressing (p. 123)

The meat-based recipes contain a range of different types of meat, including chicken, pork, beef, lamb and seafood. Some of the meat-based dishes include:

For those with a sweet tooth...
On the front cover, it mentions that "All recipes are sugar-free and gluten-free". While the recipes don't contain any refined sugars, there are still quite a few sweet recipes which are sweetened using ingredients such as maple syrup, coconut sugar, honey, rice malt syrup and fruit. Some of the sweet recipes include:

The book is very bright and colourful, and the food styling and photography is fantastic, with the combined efforts of photographer Armelle Habib, Prop and Food Stylist Karina Duncan, and Food Preparation team Emma Christian and Emma Warren resulting in a very visually appealing book.

Overall, it's a beautiful book with a good range of healthy recipes, and recommended particularly for those following a gluten-free and/or refined-sugar-free diet.
