Tamari Almond and Spicy Green Bean Rice

If you've seen my
Jamaican Rice Recipe you'll know I've been trying to find 'rice' recipes which are tasty, easy and provide an alternative to the old vegetable stir-fry staple. Here's my latest experiment
, it's fresh, simple and delicious. This recipe serves 4.
Ingredients:
125g of roughly chopped tamari roasted almonds
(see note at the bottom of article*)
2 tbspns of sesame oil
500gms/2.5 cups jasmine rice
4.5 cups of vegetable stock
2cm piece of ginger, peeled and grated
2 crushed garlic cloves
1 long red chilli seeded and finely chopped
375gms green beans cut into 5cm lengths
125ml hoisin sauce
1 chilli seeded and finely chopped
1 tbspn soft brown sugar
Recipe:
1) Cook rice with vegetable stock in a rice cooker or on the stovetop. While you are cooking the rice you can prepare the beans and almonds.
2) Heat oil in a large frying pan or wok. Add chilli, ginger and garlic and cook for 1 minute.
3) Add the beans, hoisin sauce and sugar. Cook for 3 minutes or until the beans are tender but still crunchy.
4) Add almonds. Cook for 1 minute.
5) Remove from heat.
6) Spoon rice into bowls. Place the sauce on the top.

Tamari Almonds are available at health food stores or you can make them yourself. To make them, soak the almonds in Tamari Sauce for 30 mins. Drain the tamari sauce and then pat the almonds dry with paper towel. Place the almonds in a non-stick frypan with 1 tbspn of oil and cook for 2 minutes.
