Sweet Potato Soup Recipe

When you've got the sniffles/snivvles - pronunciation variable depending on the depth of your illness - and your nose has turned into a tap, your head needs clearing, and your throat needs something soothing?

Enter the wonder soup! Wonder because it it is so simple to make, takes a few ingredients and manages to satisfy both big and little invalids.

Roast the following ingredients:

A large sweet potato

Season the following with olive oil (extra or not), basil leaves, thyme, tarragon, black pepper and a tiny bit of salt then transfer to the oven:

Half a courgette,
Half a red onion,
Half a yellow, red and green pepper
3 cherry tomatoes

(Note: roast the sweet potato first, then once half an hour has passed, add the seasoned vegetables)

Once the ingredients are nicely roasted put them in a blender with 200ml of chicken stock and a tbsp of milk (soya/rice/cows). Blend. Beautiful.

Serve with a dollop of double cream swirled in the middle and dust with chilli powder to clear your head and for extra prettiness.
