The trick is all in the batter. If it is for a special occasion or a party, make sure the batter is only small when placed on a fry pan, or if it's for your dinner, put a large batter for each one on the pan.
Ingredients:
1 egg
310g can corn kernels, drained
1/2 red onion
1/2 cup of wholemeal self raising flour
1/3 cup skim milk
1/3 cup low-fat cottage cheese
cooking-spray oil
Method:
1. Whisk egg in medium bowl; stir in corn, onion, flour and milk.
2. Spray large frying pan with cooking oil. Pour 1/3 cup of batter into heated pan, cook for about 2 minutes. Turn fritters, cook until lightly browned on the other side.
3. Serve warm fritters dolloped with cheese, sprinkled with fresh dill or parsley if you like.
