Healthy, simple and tasty. Addictive as ever, you keep going back for more. Great for dinner ideas or even as party foods.
The trick is all in the batter. If it is for a special occasion or a party, make sure the batter is only small when placed on a fry pan, or if it's for your dinner, put a large batter for each one on the pan.
1 egg 310g can corn kernels, drained 1/2 red onion 1/2 cup of wholemeal self raising flour
1/3 cup skim milk 1/3 cup low-fat cottage cheese
1. Whisk egg in medium bowl; stir in corn, onion, flour and milk.
2. Spray large frying pan with cooking oil. Pour 1/3 cup of batter into heated pan, cook for about 2 minutes. Turn fritters, cook until lightly browned on the other side.
3. Serve warm fritters dolloped with cheese, sprinkled with fresh dill or parsley if you like.
