Sweet Chilli Chicken Salad Recipe

This is a simple recipe which is great for when you have left over roast chicken or schnitzel from the night before. Of course it works whether you have the leftovers or not. You can always purchase the roast chicken at your local supermarket. This is not just a salad for you ladies, I assure you that the men will also enjoy this and not complain about it not being 'enough'.

You can use as little or as much of each ingredient as you wish.

1. Chicken breast (sometimes I'll buy the roast chicken from the shops, or I'll use the leftovers from the night before)
2. Feta
3. Cherry tomatoes
4. Cucumber
5. Mixed salad leaves
6. Sweet chilli sauce
7. Balsamic dressing (or anything you desire)

1. Wash your salad, and transfer to a salad bowl.

2. Cut up your chicken breast and add to your salad.

3. Cut up the feta, cucumber and cherry tomatoes. Toss in.

4. Mix everything together, and season according to taste. There you have it, short, sweet and simple. Enjoy.

This is similar to the chicken salad I make all the time. Delicious! The only difference is that I add red capsicum. As a meal, I serve the salad with herb bread & it definitely fills you up (in a good way). I buy a baguette stick, slice it diagonally into pieces, spread with butter and dry mixed herbs and then place it under the grill. Yummo!
