Sushi Hub at Rundle Mall is one of a chain of stores that specialises in offering sushi. The first store of the chain was opened in 2006 at Cabramatta, a suburb in Sydney. There are now at least 80 stores operating all over Australia. Their sushi can either be picked individually by the customer or bought as a sushi box consisting of a combination of sushi.

Sushi Hub is notable for its offering of Inari, a type of sushi in which the rice is stuffed in a seasoned tofu pouch, with various toppings. Most sushi stores only sell the plain Inari. One of our favourites was the Mushroom Inari, which featured mushrooms that were subtly flavoured by the dressing and still retained a bit of bite. We also liked the Tuna Salad Inari because the topping was not too dry and it had some salmon roe for extra flavour.



Those that desire something a bit unique can opt for the Baby Octopus Salad Inari. The baby octopus was not too chewy and the dressing they were tossed in gave them a delectable sweet-savoury flavour. For a topping that stood out from the other Inari, there was the Tempura Veggie Inari, which had tempura-battered vegetables cooked just right and lightly covered in a sauce that tasted similar to that used for Tonkatsu.



As its name implies, the Fresh Salmon Sandwich Sushi resembled a sandwich, with the rice serving as the bread. The salmon had a lovely fresh taste and was partnered wonderfully by the omelette and avocado. Extra elements of flavour were provided by nori sandwiched between the layers of rice and a drizzling of Japanese mayonnaise.



A variety of sushi that we had not seen before, the Crab Leg Nigiri had crab legs that were cooked just right. They were also grilled lightly to give them a bit of char. Drizzling of Japanese mayonnaise and Takoyaki sauce completed the sushi.



Sushi Hub's more ordinary offerings were also a joy to eat. The filling inside the Unagi Dragon Roll was moist and the topping of grilled eel (unagi) was cooked to perfection. Also included in the filling were slices of cucumber for a bit of crunch. Their Grilled Salmon Nigiri was the store's name for Aburi Salmon Nigiri, a type of sushi in which the salmon is lightly torched, giving the lightly grilled flavour you would expect from the dish. Aside from soy sauce, customers can also have wasabi and pickled ginger to go with their sushi.





Sushi Hub at Rundle Mall primarily caters for takeaway orders, with queues forming during lunchtime. Its location makes it convenient for shoppers and workers in Rundle Mall wanting sushi that are a bit out of the ordinary.
