Strawberries are in season and very cheap at the moment, so I thought I would share my cheap, easy and very yummy strawberry crumble with you, which never ceases to please my dinner guests. Add extras like biscuits and nuts to add some crunch and texture to the dish.



Filling
4 x 250gm (small) tubs fresh strawberries (chop into quarters)
1/4 cup white sugar
1 teaspoon vanilla extract
3 tablespoons cornflour
1 cup roughly chopped nuts (optional extra) any nuts will do, even mixed nuts are fine but not salted nuts.

Topping
1 cup of plain flour sifted
1 cup oats (not 2 minute oats)
1/2 cup white sugar
1/2 cup brown sugar (pack it down into cup)
1/2 teaspoon salt
1 tablespoon cinnamon
3/4 cup melted butter
1/2 cup roughly chopped nuts (optional)
1 cup roughly crumbled sweet biscuits (optional) any biscuits you have in your biscuit barrel is fine.

Instructions

1. Preheat oven to 170 degrees C.
2. Grease a ceramic pie dish or casserole dish with butter or cooking spray.
3. Combine strawberries with sugar and mix well, and leave for a few minutes until the sugar has melted.
4. Add the vanilla extract to strawberries and mix in well for a minute.
5. Add the cornflour and stir in very well.
6. Pour strawberry mixture into your dish.
7. Place all your dry topping ingredients into a large bowl and combine well.
8. Melt the butter gently in the microwave, and add half to the dry oat mix and stir in for a good minute.
9. Add the remaining butter and again stir in well for another minute.
10. Spread on top of your strawberry mixture.
11. Bake in the oven for approx 35 - 40 minutes. Remove and leave to cool slightly for 5 mins.
12. Serve with cream or ice-cream, or both, and enjoy.
