Strawberry & Coconut Healthy Muffin Recipe

An easy recipe using almond meal - perfect for the kids
Do you love to eat muffins, but are trying to eat healthier? Me too! This recipe uses 3 cups of almond meal, instead of flour, which is lower in carbs and higher in protein and fibre. It also uses honey instead of sugar, adds flavour with spices and each muffin is topped with chia seeds - which injects some crunch and goodness!

Although almond meal is more expensive than flour, if you have made the switch away from white flour for your health or dietary requirements, then it is worth paying the extra. You can taste the wholesome goodness in each muffin - which means that you can have more than one! Keep reading for an easy recipe which you can make this weekend with your kids, or make for yourself and have them for morning tea at work next week. Whatever you do with them, you are sure to enjoy every one!



Ingredients: (Makes 9 muffins)

3 cups almond meal
1/2 cup desiccated coconut (optional)
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon mixed spice
1/2 teaspoon vanilla essence
1/2 cup honey
3 eggs
1 cup frozen strawberries (or fruit of choice)
2 teaspoons chia seeds

What to Do: Steps 1 - 4


What To Do:

1/ Preheat oven to 180 degrees, fan-forced. Spray a muffin tin with olive oil.

2/ In a large bowl, add the almond meal, coconut, baking soda, cinnamon and mixed spice and combine.

3/
In a small bowl, combine the vanilla essence, honey and eggs and combine.

4/ Pour the wet ingredients into the dry ingredients and combine well. Stir through the frozen strawberries.

5/ Scoop mixture into the muffin holes. Sprinkle the chia seeds on top.

6/ Bake for 20 minutes. Ensure you allow the muffins to cool in the tray, to let the strawberries harden up and stay in shape. That's it! They are short on time to make, but big on flavour!

Bake on 180 degrees for 20 minutes, then cool in tin
