An easy recipe using almond meal - perfect for the kids
Do you love to eat muffins, but are trying to eat healthier? Me too! This recipe uses 3 cups of almond meal, instead of flour, which is lower in carbs and higher in protein and fibre. It also uses honey instead of sugar, adds flavour with spices and each muffin is topped with chia seeds - which injects some crunch and goodness!
Although almond meal is more expensive than flour, if you have made the switch away from white flour for your health or dietary requirements, then it is worth paying the extra. You can taste the wholesome goodness in each muffin - which means that you can have more than one!
