The Rocks in Sydney is home to many fascinating places of history and culture. The old sandstone buildings of the late eighteenth century and the nineteenth century that are still standing are interspersed with the modern structures that constitute arcades, shops and offices.

The steel and sandstone are a contradictory complementation of each other. This history amongst the modernity, and the modernity within older buildings is perhaps what makes The Rocks one of the most interesting places to visit in Sydney.

One of the most intriguing shops in a little place called The Rocks Centre is called Sticky, a place where rock candy is made daily for tourists and visitors to the centre to witness. Known as Candy Artisans, the makers of the candy not only make the recipes on hand but also make their own experiments. The day I was there, the two Candy Artisans working had created an orange and white striped lolly that tasted of peppermint. I got to watch the whole process, from the start to finish.

After splitting the mixture into what will become the orange and white stripes, at least in this instance some sections are spun around a hook so the mixture becomes thicker and less transparent.

It was fascinating to watch the candy being cut and the colours rolled together. It's quite a spectacle that I have not seen anywhere else and can draw quite a crowd. The finished product is a small, rounded treat, and can then be bought either in a small bag, or a jar.

Sticky's selection goes beyond what you watch them make. There are jars and bags of lollies of all varieties of designs and flavours, such as huge, tasty musk sticks, quite unlike the ones one would find in supermarkets, and huge chunks of off cuts and lollipops that are so big, they may never fit in your mouth until the very end.

If you are after an interesting activity to do in The Rocks, then Sticky is a great place to visit and watch them make the candy. Make a stop at this store and experience the magic of watching the candy being made, sample it, and take some home with you to savour and enjoy. And I recommend getting at least the small jar if you really enjoy the sample. This can be a unique and exciting experience, and is definitely something that, in my view, stays with you.
