Hot Chips at the Mall
The hot chip. It's simple but complicated. There are only two essential ingredients, potatoes and oil, but the choice of potato and oil, the temperature, the timing, the decision to peel, to cook multiple times or to batter leads to a bamboozling number of combinations.
When walking through Rundle Mall in the heart of Adelaide, it's easy to find delicious food options to weigh down the belly while lightening the wallet. One of the food trucks available in Rundle Mall is "Spuds Pro," a small wagon selling beer battered hot chips in cones with dip. The chips are satisfyingly hot, with a lightly seasoned, crispy (but not shatteringly so) thin exterior yielding to a fluffier than expected interior. The range of dips is interesting and ranges from garlic aioli to creamy blue cheese and sriracha mayo.
