Melbourne has many layers; its gems are often hidden from sight, but when found, give delight. The Spring Street Cheese Cellar is no exception. Hidden under the Spring Street Grocer, down an unassuming spiral staircase, is a cheese lover's heaven to rival even the Victoria Market Deli section.

The array of cheeses almost seems overwhelming, if not mouth-watering. Their farmhouse and artisan cheeses are from Australia and overseas. Those cheeses that need further maturing are aged on-site in the cellars behind the cheese stand and turned by the cheesemonger every month. A more mature cheese often costs more than its earlier self, as the flavour intensifies and the cheese wheel shrinks in size.
Don't know anything about cheeses? No problem, the cheesemonger is only too willing to share his knowledge either personally or for those who don't like to get to close, a cheese plate is a good option.
