This healthy, quick and easy vegetarian snack or light meal only takes 5 minutes to prepare and 20 minutes to cook. Eat this meal fresh and hot straight from the oven.

Spinach & Feta Pie
Eat warm as a snack or with a side salad!

Spinach & Feta Pie (serves 4)


4 free range eggs, whisked together
25grams of baby spinach washed & diced
50grams of crumbled Danish feta
Pinch of vegetable/herb salt


1.Preheat oven to 180c degrees.

2.Pour whisked eggs and a pinch of vegetable or herb salt into a greased pie dish.

3.Mix spinach and feta in a bowl and sprinkle over egg mixture.

4.Place in oven for 20 minutes or until egg is set.

5.Cut into quarters and eat as a light snack or serve with a garden salad.
