Spicy Indian Chicken Marinade Recipe

Are you looking for an easy chicken marinade that packs some punch? This recipe only has 6 ingredients to spread over the chicken pieces and then you leave it overnight, so that the flavours infuse into the chicken. Our family makes two trays of this recipe - one for dinner and then another tray for cold meats the next day - just double the recipe to do the same. It is a tasty addition to wraps and sandwiches.

I find that this recipe is a good one to have on hand for when I haven't done the food shopping, as all I need to do is defrost the chicken and the rest of the ingredients are already in my pantry. It is then an easy, weeknight dinner for the whole family.

Ingredients:

**2 pieces of Maryland Chicken or chicken pieces (skin on)
3 cloves garlic, finely chopped
2 Tablespoons tomato paste
2 Tablespoons white wine vinegar
1 Tablespoon Garam Masala spice powder
1 Tablespoon minced ginger
1/4 teaspoon cayenne pepper spice**



What To Do:

Step 1: Preheat oven to 200 degrees, fan-forced.

Step 2: In a small bowl, combine the marinade ingredients and mix to combine.

Step 3: Lay the chicken pieces in a shallow dish and spread the marinade over the top. Flip and turn the chicken to ensure all areas are covered. Leave overnight, and then as long as possible, for the flavours to infuse.

Step 4: Line a shallow oven tray with baking paper and lay the chicken pieces on top. Cover the tray with foil.



Step 5: Bake for 20 minutes, remove the foil, then bake for another 25 minutes for small chicken pieces or 35 minutes for Maryland chicken or larger sizes. Slice into the chicken down to the bone and check that it is cooked all the way through. Serve!

Although I haven't tried it myself, this recipe could also be cooked on the BBQ in a foil tray. Ensure you have it covered with foil for the first 20 minutes still, to ensure the marinade doesn't burn while the chicken is cooking through.
