Spiced Roast Lamb Recipe

You will need:
2 kilogram leg of lamb
1 teaspoon of chopped parsley
1 teaspoon of chopped rosemary
1 teaspoon mixed herbs
1 tablespoon mixed spice
2 tablespoons tomato paste
1 tablespoon olive oil
2 thinly sliced cloves of garlic

Sauce:
1/4 cup red wine
1 tablespoon soy sauce
1 tablespoon worcestershire
4 tablespoons chutney
1 tablespoon tomato paste
1 tablespoon olive oil
1 tablespoon brown sugar
pinch of cayenne pepper




Step 1:
Preheat conventional oven to 200 degrees and fan forced 180 degrees. Make small pockets in the surface of the lamb leg and insert garlic slices.

Step 2:
Mix herbs and spice together with olive oil and tomato paste. Rub this mixture all over lamb leg. Place in the oven and cook for approximately 2 and a half hours.

Step 3:
Sauce - combine ingredients and bring to a simmer in a saucepan. Reduce until thickened. Use some of this to baste the
roast in the last half hour of the cooking process.

Serve with roasted vegetables and reduced sauce. Enjoy.
