An easy winter warmer for the whole family
This winter soup recipe was given to me by a friend a couple of years ago when I told her that I was getting bored with my winter soup options for the family. Although each year I pull out our trusty family favourites (eg. Easy 5-Ingredient Vegetable Soup), sometimes it is refreshing to add something new to the winter soup options. When I made this for the first time I was surprised that my daughter loved it so much, considering its spices and flavours. It is now a family favourite - so much so, that I made it last night!
In a large pot, add the olive oil, celery and carrots. Cook for 5 - 10 minutes until soft.
Stir through garlic and cook for 2 minutes.
Add ground coriander, ground cumin, dried red lentils, diced tomatoes and vegetable stock. Bring to the boil, reduce heat and cover. Simmer for 20 minutes, then simmer and stir for a further 5 - 10 minutes, so it doesn't stick to the bottom.
Use a hand stick blender and blend until smooth. Stir through the milk and serve with crusty bread.
Easy, isn't it? I have found this to be a good recipe to make on a busy weeknight - I just pick up some fresh bread throughout the day and it doesn't take too long to make. Enjoy!
