Are you looking for a Special Fried Rice recipe that is easy to make and tastes delicious the next day, for leftovers for lunch? My family and I love this recipe as it tastes just like takeaway, but fresher and healthier. My daughter likes to eat it as a side dish without the prawns, whereas us adults eat it as a meal main in itself. We use 300g of frozen prawns, however, feel free to use more or less or swap it out for strips of BBQ pork from the Asian supermarket, for an even more authentic taste.

Ingredients
**2 cups Jasmine rice
4 rashers shortcut bacon, finely chopped
1/2 cup olive oil
2 garlic cloves, finely chopped
1 onion, diced
2 eggs, beaten
1 cup frozen peas, defrosted
300g frozen cooked prawns, defrosted (tails removed)
1 teaspoon Chinese Five-Spice
1/2 cup low salt soy sauce
4 shallots, thinly sliced**
What To Do
Step 1: Cook rice to directions (we use a rice cooker and cook it with 3 cups of water).
Step 2: Add 1 Tablespoon oil into a large non-stick frypan or wok, and add the bacon. Cook for 5 minutes until crispy then add to a large bowl.
Step 3: Add another 1 Tablespoon olive oil to the frypan and add the garlic and onion. Fry until the onion is clear. Remove from heat and add the garlic and onion to the large bowl with the bacon.
Step 4: Add a teaspoon of oil to the frypan and add the egg. Swirl it around the pan to form a thin layer and then after it has set, use a spatula to roll it up and remove it from the pan. Slice thinly and add it to the large bowl. Add prawns and peas into the large bowl.
Step 5: Add another teaspoon of the oil to the frypan and add the rice and stir. Combine the soy sauce and Chinese Five Spice in a small jug and then pour over the rice. Stir.
Step 6: Pour all of the ingredients in the large bowl into the frypan and stir to combine. Add the shallots and serve!
Place the leftovers in a container and pop it in the fridge as soon as possible. Ensure you heat it up thoroughly the next day, so that the prawns are cooked through. Enjoy!
