Quiche should have three elements.
1. Crisp, fresh pastry
2. Delicious Mediterranean vegetables

I had the most delicate and delicious quiche - made by French people - at Caparezza Espresso Bar in James Pl. in the city. The pastry was much thinner, so didn't overwhelm the dish, and the egg custard just melted in your mouth; it was creamy and earthy from the mushrooms and had toasted pine nuts on top. Eating it was a sensual experience. I had it without salad, as I was in a hurry and needed a quick lunch, before work, but it cost around $7 from memory. I then went the rest of the day not needing anything else to eat, as this quiche was so sustaining. That is, until dinner. At the time, Caparezza had the two types of quiche, I opted for the mushroom and it was amazing.
