Silo by Joost is a waste-free café. That's right, absolutely no waste. Zero. Zilch. Nada. Food scraps are dehydrated and turned into fertilizer which is delivered to farms; drinks (including mineral water, milk and spirits) are delivered in kegs, pails and barrels; coffee and fruit and vegetables are delivered in reusable packaging.
The food is made as much as possible on-site, from scratch.
You can watch bread, pasta and pastries being made fresh by the chef as you sip from your hand-pottered mug. These guys even mill their own grain and churn their own butter!
Their total commitment to the environment, like their food, is fresh, wholesome and inspiring.
