Sfingi (Sicilian Doughnuts) Recipe
In recent times, most of us have been faced with having extra time on our hands. Discovering new hobbies, getting creative or investing time into those DIY home renovations, have become quite popular. For me, I love to cook and this time has given me the opportunity to experiment and try new and sometimes more time-consuming recipes.
This is my mother in law's traditional Sicilian Doughnut recipe. Sfingi are little golden doughnuts full of goodness, and are loved and devoured by all. With only an hour resting time needed, these treats are easy to make and are a delicious afternoon snack.
Ingredients
1 tbs dry yeast
1 tsp sugar
2 cups plain flour sifted
1 ½ lukewarm water
1 potato, boiled, peeled and mashed
salt
Vegetable oil for frying
½ cup sugar
½ tsp cinnamon
Method
Combine yeast with 1 teaspoon of sugar and a ¼ cup lukewarm water. Let stand until yeast activates and becomes frothy.
In a separate bowl mix flour, a pinch of salt and mashed potato.
Add yeast with 1 cup of lukewarm water to flour and mix to form a thick sticky dough consistency. Add more water if necessary.
Let dough rest for an hour.
On a plate, combine sugar and cinnamon and set aside.
Heat oil in a deep fryer or large pan, and test with a small piece of dough to check when hot. Drop a spoonful of dough into the oil and fry till lightly brown and cooked inside.
Dust in cinnamon/sugar mix and enjoy.
