This is a quick and simple recipe that will definitely satisfy your breakfast needs. It also works as a lunch time meal or dinner time.
Ingredients: 1. 2 Eggs 2. 2 Tomatoes 3. 1 bunch of asparagus 4. Bread of your choice (optional) 5. Salt and pepper (optional)
Method 1. Wash and dice up your tomatoes. You can peel the tomatoes if the skin bothers you.
2. Heat olive oil in a frying pan and add your tomatoes. Let them cook until they're soft. That way you get all the juice from the tomatoes and they won't be hard to eat. You may want to season this now as the tomatoes can produce acid and taste a little bitter.
3. Beat your eggs in a separate bowl and pour over the tomatoes. Again you may want to add a little more seasoning. Let your eggs cook slightly before scrambling. Scramble as you usually would with a spatula.
4. Wash your asparagus and cut off the stems. Steam them in the microwave with a little olive oil and salt. They should only need 1.5 minutes.
5. Now that everything is done, serve in your preferred plate. You may like to toast a piece of bread if you wish. Enjoy.
